How To - Homemade Buttermilk Pancakes (OMGoodness)!


This is a homemade from scratch blueberry buttermilk pancake recipe! It has ground or milled flax seed that is optional which is a good source of fiber. Also the title is a play on OMG for O-Me-Ga as in Omega 3 (6 & 9) oils LOL! INGREDIENTS 1 cup flour (For a healthier option, substitute 1/4 or 1/3 cup with wheat flour. Then, you'll need 3/4 or 2/3 cup of all-purpose flour with the additional wheat flour to make one cup.) 2 Tablespoons ground or milled flax seed 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon cinnamon 1 egg, beaten 1 cup buttermilk 2 Tablespoons sugar 2 Tablespoons oil (or to cut the fat, use 2 Tablespoons unsweetened applesauce) 1/2 teaspoon vanilla extract 1/2 - 1 cup of fresh or frozen blueberries Maple syrup DIRECTIONS Please look at my "Easy Banana Pancakes" video for a recipe for a buttermilk substitution. www.youtube.com Combine the flour, ground or milled flax seed, baking powder, baking soda, salt, and cinnamon together in a medium mixing bowl. Sifting the dry ingredients is optional, but it helps to make your pancakes from scratch fluffier. In another bowl, combine the egg, oil or applesauce, sugar and vanilla. Stir in buttermilk or buttermilk substitution made earlier. Make a well in the dry ingredients and add all of the wet ingredients to the dry ones.
